Cocktail Recipes: Spicy Thai Chile Paloma

My Spicy Thai Chile Paloma has a lot of unexpected twists, but it stays true to the classic Paloma recipe. Scroll down for the full recipe!

If you have read my bio, you know that a Paloma is one of my favorite cocktails.   While a classic Paloma cocktail incorporates tequila and grapefruit, my Spicy Thai Chile Paloma recipe has a couple of unexpected twists.  In addition to fresh grapefruit, I also add one ounce of my Homemade Grapefruit Simple Syrup in the cocktail.  Click here, for the recipe.   The combination of fresh squeezed grapefruit juice and Homemade Grapefruit Simple Syrup provides the cocktail with a robust grapefruit flavor and a beautiful hue.

There are many ways to make a Paloma, however, this recipe is an amalgamation of my favorite elements used in the many Palomas that I have tasted over the years.  Aside from grapefruit, I also include lime in this recipe.  In certain parts of Mexico, lime is used in lieu of grapefruit to make Palomas.  The addition of the Thai Chile in this recipe is inspired by North Carolina’s diverse culinary scene.  It is meant to add a subtle heat to the cocktail.  Now that I have shared my inspiration behind this Spicy Thai Chile Paloma, let’s get to the recipe!

Spicy Thai Chile Paloma Cocktail Recipe

Spicy Thai Chile Paloma

The Thai Chile in this recipe provides an unexpected kick to the classic Paloma.

Servings 1 12 oz cocktail

Ingredients
  

  • 1 oz Homemade Grapefruit Simple Syrup
  • 1 Thai Chile
  • 2 oz Tequila Reposado
  • ¼ cup Grapefruit juice juice of ½ a medium grapefruit
  • 1 tbsp Lime juice juice of ½ a lime
  • 1 cup Ice
  • 2 oz Fresca Grapefruit Soda
  • 1 - 2 tbsp Tajín
  • 1 Lime slice garnish
  • 1 Grapefruit wedge garnish

Instructions
 

  • Moisten the rim of a cocktail glass with a grapefruit wedge. Add 1 - 2 tablespoons of Tajín to a cocktail rimmer and coat the cocktail glass with Tajín. Garnish the glass with a lime slice and a small grapefruit wedge. Set the glass aside.
  • Pour one ounce of Homemade Grapefruit Simple Syrup into a small dish. Macerate one Thai Chile in the syrup using a spoon or fork. Let the macerated Thai Chile soak in the Simple Syrup for one minute. Strain the Grapefruit Simple Syrup into a cocktail shaker. This step is important. You must strain the Thai Chile and it seeds. Otherwise, it will result in an extremely spicy cocktail. Discard the Thai Chile and its seeds.
  • Add the Tequila Reposado, Grapefruit Juice, Lime Juice and Ice to the cocktail shaker. Shake for 15 seconds. Pour the mixture into the cocktail glass. Top the cocktail with 2 oz of Fresca Grapefruit Soda. Stir gently and enjoy!

The fresh grapefruit juice and the Homemade Grapefruit Simple Syrup honors the beautiful winter fruit.  Although there are many grapefruit varieties available, my favorite is the Rio Grande Valley’s Ruby Red Grapefruit.  The Spicy Thai Chile in this recipe is meant to give the Paloma a subtle heat.  As mentioned in the recipe, a mesh strainer must be used to strain the Thai Chile and its seeds.  Not properly straining the Thai Chile will result in an extremely fiery cocktail.

Even though I used tequila reposado in this recipe, mezcal can be substituted in this cocktail.  The mezcal will add a lovely smoky element to the cocktail.  If you enjoy tequila and mezcal as much as I do, you will also enjoy my Tamarind Margarita.  Click here for the step by step recipe.

I am a huge fan of lychee martini’s. @red_thest I am a huge fan of lychee martini’s.  @red_thesteakhouse in Miami makes a great one.  It pairs beautifully with their signature Four Cheese 🧀 Macaroni & Cheese.  Our waiter suggested that we add lobster 🦞 and it’s was maginifique!
I may be biased - because I am a Texan, but @visit I may be biased - because I am a Texan, but @visitsouthpadreisland restaurants make the best fried red snapper.  Here’s an excellent one from @dirtyalspelicanstation .
I can’t decide what I like more, Cocktails 🍸 I can’t decide what I like more, Cocktails 🍸 or Cake 🍰? After years of driving by Maximillians Grill & Wine Bar on Chapel Hill Rd. in Cary, I finally went with my friend @ejdevita for a Taurus Celebration Dinner.  Everything was fantastic.  If you are a Martini-lover, try the Max Martini with blue cheese stuffed olives 🫒. My fellow Taurus introduced me to Martinis on the Rocks and I don’t plan to have a Martini shaken or stirred anymore.  Maximillians makes all of their gelatos and desserts in house.  If the Coconut Cake is on the menu - order it!  It’s been one month since I had a slice of this dessert and I am still dreaming about it.  The Pei Mussels are another must.  Focaccia accompanies the mussels to soak up the delicious seafood broth.  Other notable mentions are the Voodoo Of The Day and the Double Cut Pork Chop.  @maximilliansgrillandwine menu is farm to table so dishes may change.  If it’s not too hot out, grab a table on their patio.  I do recommend you make a reservation - to guarantee your spot.  Maximillians is located on 8314 Chapel Hill Rd. Cary, NC 27513.
Celebrating National Burger Day with @whataburger Celebrating National Burger Day with @whataburger Double Meat, Double Cheese on a toasted bun.  After all, did you really go to Texas, if you did not eat at Whataburger at least once.
Pure Vegan Cafe is a juice and vegan food restaura Pure Vegan Cafe is a juice and vegan food restaurant focused on using high quality, healthy ingredients to create premium juices, smoothies, and 100% vegan food. I visited their
8369 Creedmoor Rd. location in Raleigh after work last week and sampled their delicious plant-based menu items.  While I am not Vegan, I do follow a diet rich in vegetables and fruits.  Some of the food I sampled included the Banana Toast Crunch, PVC Tiki Burger, Chipotle Bowl and Novid Orange juice.  I could not stop eating the PVC Tiki Burger.  It is made of potatoes, peas, carrots and spices topped with lettuce, tomato, avocado, microgreens, chipotle mayo & honee mustard.  In addition to the flavors, I like that I could see the veggies in this burger.  It wasn’t a patty of mashed or compressed vegetables.  I also enjoyed the Chipotle Bowl Salad made of romaine, black beans, avocado, quinoa, pico cashew dressing and cilantro dressing.  Do not leave @purevegancafe with out trying an order of Sweet Potato Buffalo Ranch Fries!  Make sure you bring a friend or two to sample these fries because you may end up eating the whole basket like I did 😂.
